Starbucks Inspired Mocha Cookie Crumble Frap



The cupcakes!


2 1/4 cups all-purpose flour
2 cups sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup vegetable oil
1 cup of very strong brewed coffee, cooled
3 large eggs
1 (8-ounce) container sour cream
1 teaspoon vanilla extract

Step 1: In a large bowl mix the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Next add the oil, coffee, and eggs. Beat at medium speed until smooth. Then mix in the sour cream and vanilla.


Step 2: Place in cupcake liners and bake at 350 for 20-23 minutes.

The frosting! 

3/4 cup salted butter
1/4 cup vegetable shortening
4 tablespoons very strong coffee (warmed)
1 teaspoon pure vanilla extract
1 cup dark unsweetened coco powder
4 cups confectioners sugar
Oreo cookies


Step 1: Cream together the first 4 ingredients with a beater on medium speed.

Step 2: Slowly add in the coco powder and confectioners, when you are doing this the frosting may seem crumbly. Don't worry! I thought for sure I did something wrong but as you keep mixing the frosting it will turn creamy. If the frosting is still too crumbly you can add in more coffee. I added in an extra 2 tbl spoons! 

Step 3: Smash up the Oreo cookies in a bag and sprinkle them over top of the cupcakes! I added a paper straw on the side so that they look like mini drinks!
