Vegan Chocolate Chip Cookies
Makes 2 dozen- 2 1/4 cup flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup Earth Balance (vegan butter)
- 3/4 cup brown sugar
- 3/4 cup coconut sugar sugar
- 1 tsp vanilla
- Ener-G Egg Replacer for 2 eggs
- 1 1/4 cups vegan chocolate chips
PREHEAT oven to 375
BEAT earth balance and sugars until light and fluffy. Add vanilla, "eggs", salt and baking soda. Slowly mix in flour. Stir in chocolate chips.
MAKE small balls of dough and place on sheet.
BAKE for 8 minutes. Let cool.
