- Since Easter is right around the corner I thought I would share this lemon recipe with you guys! It is so delicious I made it for my sisters wedding this past weekend and I also made it last year for easter! (I got this recipe from myrecipe.com but I changed the frosting recipe and I tweaked the cake recipe a bit!) If you want to learn how to make the easter cupcake above click here:)
- Ingredients:
- 1 1/3 cups granulated sugar
- 6 tablespoons butter, softened
- lemon rind of 1 lemon
- 3 tablespoons fresh lemon juice
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 large egg whites
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 1/4 cups fat-free buttermilk
- Frosting:
- 1 pound Cream Cheese
- 2 sticks of butter
- 1 teaspoon Vanilla
- 2 teaspoons lemon juice
- 1 teaspoon lemon rind
- 3 cups of confectioners sugar
- Step1: Pre-heat oven to 350. Combine the first five ingredients and mix for 5 minutes.
- Step2: Add in both the eggs and egg whites (one at a time)
- Step3: In a separate bowl combine all the dry ingredients (flour, baking powder, salt, and baking soda)
- Step4: Starting with the dry ingredients add them to the wet mixture then add the buttermilk(alternate until there is none left) Put into baking cups and bake for 20-22 minutes.
- Frosting:
- Cream the butter, vanilla,lemon rind, lemon juice and cream cheese. Slowly add in the confectioners sugar.
