I am SO excited for the Minion movie to come out next week! The minions are so adorable and funny so I wanted to make some type of minion treat. I decided to go with macarons because I have been craving them like crazy lately! The recipe I am going to be using is from Ladurée , I recently got their macaron recipe book and i've been dying to try out their recipes. These macarons were so cakey and delicious!
In my minion video I got a little too excited and didn't follow the instructions exactly hehe, but they still came out amazing! Here are the exact steps!
MACARON SHELLS
- 2 & 3/4 cups + 1 tbsp almond flour
- 2 cups + 1 tbsp confectioners' sugar
- 6 +1/2 egg whites (room temp)
- 1 cup + 1 tbsp superfine sugar
- Lemon yellow food coloring
Makes 100 shells
PREHEAT oven to 300F
SIFT the ground almond flour and the confectioners sugar into a small bowl.
WHISK 6 egg whites until foamy. Once they are frothy, add a third of the granulated sugar, whip until the sugar has dissolved. Add another third of the sugar, whip for 1 minute. Add the last third of the sugar and whip for one minute. Egg whites should be glossy and hold soft peaks. Add in yellow food coloring.
FOLD the almond flour and confectioners' sugar into the whipped egg whites. In a separate bowl, beat the remaining 1/2 egg white until just frothy. Then add it to the final mixture, folding gently to slightly loosen the macaron batter.
PLACE batter in piping bag and pipe small circles on parchment paper. Let shells sit for 10 minutes until baking.
BAKE 14-15 minutes.
FILLING
- 1 & 1/2 sticks unsalted butter
- 2 cups confectioners' sugar
- 1-3 tbsp milk
- 1 tsp. vanilla
BEAT the butter and sugar together, add vanilla and milk.
ASSEMBLE
SPOON the filling onto the shell and place another shell on top.
CUT mini marshmallows in half and place on the macarons to create eyes. Take an edible marker to draw the pupils, smile, glasses strap and hair. Use silver pearl dust mixed with water to paint a silver rim around the eyes to create the goggles.
