Summer is approaching which means it's time for bonfires and s'mores! I love s'mores so these cupcakes are a dream for me! I also can't wait to try the Starbucks S'mores frappuccino! Have you tried it?! This will be my third time making a S'mores cupcake! I've made a Gluten Free S'mores Cupcake and a S'mores Cupcake in a Mug!
Chocolate Cupcakes
- 2 & 1/4 cups all-purpose flour
- 2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 1 & 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 1 cup of very strong brewed coffee, cooled
- 3 large eggs
- 8-ounces container sour cream
- 1 teaspoon vanilla extract
Recipe adapted from the lovely Paula Deen. Makes about 30 cupcakes
PREHEAT oven to 350ºF
MIX the flour, sugar, cocoa powder, baking soda, baking powder, and salt in a large bowl. In a separate bowl add the oil, coffee, and eggs. Beat at medium speed until smooth, slowly blend in the dry ingredients, then mix in the sour cream and vanilla.
SCOOP graham cracker cumbs into the bottom of each cupcake wrapper. Next, add in one tablespoon of cupcake batter.
BAKE 16-18 minutes or until done.
Marshmallow Frosting
- 1 stick salted butter
- 1 cup marshmallow fluff
- 1 & 1/2 cups powdered sugar
- 1 tsp. vanilla extract
- 2 tbsp. heavy whipping cream
BEAT the butter and fluff until light and fluffy. Add in the vanilla, powdered sugar and whipping cream and beat until the frosting is blended.
Now it's time to decorate these delicious cupcakes!
SPOON on the frosting. Drizzle melted chocolate on top, I roasted a marshmallow and added it on top and placed a graham cracker on the side!
